Maggiano's Salad Dressing?

Allison and I love Maggiano's and specifically we love their house salad. What sets it apart is the salad dressing and we have found a recipe. We found this site with a copy cat recipe and tried it tonight. Eating it right away we felt it was lacking something (more vinegar, or maybe the salt to taste?) so we will try it again tomorrow after it sits longer but you have to try it as it is still really delicious.

By the way this is for 2 quarts which is a lot but the site allows you to change the amount and it automatically converts the amounts. The problem I found is how do you measure 1/6 of a cup, so you will need a conversion reference. I still have the recipe book mom gave me when I left for college so I was able to pull it off.

Ingredients:
1 ounce Colemans dry mustard
1/3 cup sugar
3/4 cup water
1 ounce garlic -- finely chopped
1/4 cup red vinegar
1 cup white vinegar
salt -- to taste
1 quart corn or canola oil
1 cup virgin olive oil
2 teaspoons crushed red pepper
2 teaspoons fresh ground pepper
1 teaspoon fresh oregano

Directions:

Combine mustard, sugar, water, red and white vinegar, and salt in food processor. Mix until smooth. Slowly drizzle in the oils, continue to blend for 2-3 minutes. Transfer to bowl and add remaining ingredients with wire whisk. Store in sealed containers in refrigerator.

Wow! You still have that cookbook?

If you have to put everything into the food processor, I think you might save a step and just throw in the whole clove(s) of garlic. I'm all for easy.

Kris: Dad said your tuition would not have covered the cost of rebuilding the dorm after the fire. :)

Hi, I found your blog when I googled "Maggiano's Chopped Salad House Dressing". How did the dressing turn out? Is it better a couple of days after thing s have settled?

I just made some and like you, I feel something is missing. Like it needs to be sweeter or something.

Nikki,
We did find that after a day or two it got better but it still lacked that something. Also after about a week it starts to separate.
