And the fun (sickness) doesn't stop...

Allison posted yesterday about Seth, I wanted to add to that today by sharing the email I sent my manager today -

  • Seth – ear infection, congestion, getting 2 teeth in at once (first ones)
  • Tom – amazingly – ok. With my luck I will get something nasty on the flight in for TR6 !

I knew something was up with Zachary yesterday, instead of going into Sunday School class he chose to come into church with me, he sat on my lap the entire time, 1 hour. And then instead of going the second hour to Sunday School he chose to come to our class which I co-teach. So I let him come and he laid on the floor for another hour without saying 1 word coloring on some paper.

3 almost 4 year old boys do not sit still for 10 minutes let alone 2 hours.

So Seth's had a cold for about two weeks. I decided to take him and Sophia in to the doctor and what do you know they both have ear infections. This is Sophia's third in the last month! Then today as I'm playing around with Seth I notice he is getting his bottom two teeth. Poor guy he must be miserable. Here's hoping this round of antibiotics work.

Maggiano's Salad Dressing?

Allison and I love Maggiano's and specifically we love their house salad. What sets it apart is the salad dressing and we have found a recipe. We found this site with a copy cat recipe and tried it tonight. Eating it right away we felt it was lacking something (more vinegar, or maybe the salt to taste?) so we will try it again tomorrow after it sits longer but you have to try it as it is still really delicious.

By the way this is for 2 quarts which is a lot but the site allows you to change the amount and it automatically converts the amounts. The problem I found is how do you measure 1/6 of a cup, so you will need a conversion reference. I still have the recipe book mom gave me when I left for college so I was able to pull it off.

Ingredients:
1 ounce Colemans dry mustard
1/3 cup sugar
3/4 cup water
1 ounce garlic -- finely chopped
1/4 cup red vinegar
1 cup white vinegar
salt -- to taste
1 quart corn or canola oil
1 cup virgin olive oil
2 teaspoons crushed red pepper
2 teaspoons fresh ground pepper
1 teaspoon fresh oregano

Directions:

Combine mustard, sugar, water, red and white vinegar, and salt in food processor. Mix until smooth. Slowly drizzle in the oils, continue to blend for 2-3 minutes. Transfer to bowl and add remaining ingredients with wire whisk. Store in sealed containers in refrigerator.
